Fried Smashed Red Potatoes


  • 12 small red potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Flake or Kosher salt
  • Freshly ground black pepper
  • 1/4 cup chopped Italian parsley


Place potatoes in a microwave safe bowl and cover with plastic wrap.  Microwave on HIGH for 8 minutes.  Cool slightly.  Smash each potato with the small sauté pan.  Heat oil and butter in a large cast iron skillet over medium heat.  Fry potatoes 2 to 3 minutes per side in two batches until brown and crispy.  Sprinkle with salt, pepper, and parsley.
