Bell Pepper Slaw


Ingredients

  • 1 red bell pepper, cored and thinly sliced
  • 1 yellow bell pepper, cored and thinly sliced
  • 1 (10-ounce) bag angel hair slaw
  • 1/2 cup chopped fresh Italian parsley
  • 3 tablespoons olive oil
  • 3 tablespoons apple cider vinegar
  • 2 teaspoons sugar
  • Kosher salt and Freshly ground pepper to taste

Instructions

Combine all ingredients. Cover and chill 2 hours. Can be made ahead up to 24 hours.
