Baby Arugula, Pear, Walnut and Gorgonzola Salad


Ingredients

  • 1 tablespoon minced shallot
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 2 tablespoons Sherry or white wine vinegar
  • 1 teaspoon Kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup extra virgin olive oil
  • 1 (5-ounce) package baby arugula
  • 2 Bartlett pears, cored and sliced
  • 4 tablespoons chopped walnuts, toasted
  • 4 tablespoons crumbled Gorgonzola or blue cheese

Instructions

Combine first 6 ingredients in a large salad bowl; slowly whisk in oil.  Toss arugula and pears with desired amount of dressing.  Divide onto serving plates and sprinkle with walnuts and cheese.  Serve immediately.   Makes 4 servings.
