History...

The Beginning:  Founded in 1991 by five West Alabama farmers, Harvest Select Catfish, with 75 employees, processed 100,000 pounds weekly.  Today with over 450 employees, processing plants in Uniontown, AL and Eudora, AR are processing over 950,000 pounds weekly.   In January of 1999, Paul Bryant, Jr., son of the legendary football coach Paul "Bear" Bryant, purchased controlling interest in Harvest Select Catfish.  Being a catfish farmer himself, Mr. Bryant is dedicated to the continuing expansion of the Farm Raised Catfish industry.

The Farm:  Harvest Select Catfish operates over 90% of the acreage needed to supply its Uniontown plant and 50% for its Eudora, AR facility with more acreage being added in Arkansas.
        Because only the highest quality is accepted (from start to finish), eggs from selected brood fish available are hatched and placed in nursery ponds (approximately 2-5 acres) in Inverness, MS.  At this stage, the tiny fish are known as fry.  Upon reaching 4 to 7 inches, the fingerlings, as they are now called, are transferred into grow-out ponds.  These ponds range in size from 10 to 25 acres and 4 to 8 feet deep.  They remain in these ponds approximately 12 to 18 months.
